To reduce the effect of tannins from the wooden barrel, you should do the following:
- Fill the barrel with boiling water, let the water cool, then empty the barrel.
- Refill the barrel, this time with cold water, allow the water temperature to reach room temperature, then empty again.
- You will notice that during the first few rinses, water of a black or dark brown color will flow from the barrel. Therefore, you must fill the barrel several more times until clean water begins to flow. This method will reduce the tannin levels from the oak and lessen their impact on the alcoholic beverages stored in the barrel. If you want an even lower level of tannins, repeat the rinsing with cold water several times. It is important to note that a brand new barrel might leak initially, even for the first few days. This is normal, as the staves expand and better adhere to each other during filling, thus sealing the barrel. If you leave the barrel empty, the staves will begin to contract again after a few weeks. In this case, you must refill the barrel with cold water to expand them again. When filling the barrel with water, do not use the bungs.
